Greek Lemon Chicken is one of those easy-peasy meals that I feel as though you just can’t mess up. I have been cooking this dish for quite some time now, and it has been impressive every time I have cooked it. My family loves the freshness, the rice comes out perfect each and every time. I feel that one-pot meals are a win-win, especially when you already have so much to do at any given time. I also feel that this takes so much of the cooking pressure off of you. Greek Lemon Chicken is flavorful, filling, and fast. I mean really who wants to be standing all day at the stove.
Greek Lemon Chicken For The Win…
This is a simple one-pot dish that honestly takes no time to prepare. My family loves this, and I feel as though I am always winning when I cook this. My boys love that everything is there in the skillet, and there is no fuss. I have mastered a few one-pot dishes here on the blog lately. I find that chicken is an easy crowd-pleaser, and rice paired with the chicken is also a crowd-pleaser. My boys aren’t that hard to please. They do really well on the fly and planned cooking. Greek Lemon Chicken also pairs really well with fresh herbs. I love that I use fresh Thyme to saute into this dish.
Lemon Chicken Ingredients…
I find that the fresher the ingredients the better this dish turns out. The ingredient list for this dish is very short in my opinion, and the seasonings are just RIGHT!!
Lemons (please no lemon juice out the bottle) fresh is better.
Rice of your choice. ( I love long grain rice)
Chicken breasts or thighs can work too.
Fresh Thyme- this stuff is so good.
Herbs de Provence or Italian Seasoning
Garlic Powder
Onion Powder
Sea Salt or Himalayan Salt
Chicken Broth (One container)
As you can see I am always going to choose fresh over bottled. The taste is literally unmatched when it comes to this dish. I will pretty much choose fresh over anything when I am cooking. If I don’t have any fresh ingredients, then yes I will work with what I have. We are dealing with a completely different era now, this recession has us looking at food very differently these days!

Greek Lemon Chicken, a simple full flavored dish bursting with all the fresh simple ingredients
48 ozchicken breasts or thighs (they can be split)
1TBSPherbs de provence
1tspitalian seasoning
1tspgarlic powder
1tsponion powder
1tspsea salt
1TBSPfresh garlic
Method
Season your chicken breasts with all these seasoning mentioned above.
Pound chicken breasts
saute in a sauce pan, til browned
Pull chicken off heat, and start on the rice mixture.
Drop 3 TBSP of olive oil in a larg skillet, one that can be preferebly transferred tp oven.
Medium heat put rice in pan with garlic, lemon slices, onions, and fresh thyme.
Saute that all together. Please don't burn rice, make sure to babysit this dish a bit.
One you have sauted all this a bit, pour in the chicken broth, and eyeball this so that your rice isnt' mushy.
Next, place the chicken on top of the water mixture.
Cover with foil, and place into the oven for about 45 minutes. last 5 minutes uncover and let brown up even more.
