Greek Lemon Chicken

Greek Lemon Chicken, a simple full flavored dish bursting with all the fresh simple ingredients

Ingredients
  

  • 3 lemons
  • 1 sprig thyme
  • 3 TBSP olive oil
  • 1 onion (chopped)
  • 3 cups rice
  • 1 box chicken broth
  • 4 8 oz chicken breasts or thighs (they can be split)
  • 1 TBSP herbs de provence
  • 1 tsp italian seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp sea salt
  • 1 TBSP fresh garlic

Method
 

  1. Season your chicken breasts with all these seasoning mentioned above.
  2. Pound chicken breasts
  3. saute in a sauce pan, til browned
  4. Pull chicken off heat, and start on the rice mixture.
  5. Drop 3 TBSP of olive oil in a larg skillet, one that can be preferebly transferred tp oven.
  6. Medium heat put rice in pan with garlic, lemon slices, onions, and fresh thyme.
  7. Saute that all together. Please don't burn rice, make sure to babysit this dish a bit.
  8. One you have sauted all this a bit, pour in the chicken broth, and eyeball this so that your rice isnt' mushy.
  9. Next, place the chicken on top of the water mixture.
  10. Cover with foil, and place into the oven for about 45 minutes. last 5 minutes uncover and let brown up even more.
