Crispy Parmesan and Thyme Sweet Potato Stacks

This is a simple sweet potato recie consisting of butter, parmesan, thyme, and olive oil. Can be for any holiday including Christmas, or New Year's.

- 3-4 medium sweet potatoes
- 1/2 cup freshly grated parmesan cheese
- 1/2 cup butter
- 1/2 tsp sea salt
- stalk of thyme( fresh)
Take your sweet potatoes and slice them in the mandolin.
Throw them in the bowl, and pour all of the ingredients onto the potato slices.
Take a cookie sheet, and place them in stacks into each circle of the tin.
Stack them as high as you can take them. I can usually get 10 into each circle.
Bake in the oven at 350 degrees, and for about 20-30 minutes.
Let them cool, or they will begin to fall apart on you.
Scoop out with a butter knife.
