- 2 cups sugar
- 1 tsp vanilla
- 4 large eggs
- 1 cup vegetable oil
- 3 cups shredded carrots
- 2 1/2 cups all purpose flour
- 1/2 tsp ground cinnamon
- 1 tsp baking soda
- 1/2 tsp nutmeg
- 1/2 tsp allspice
Mix everything by hand
Pre-heat oven to 350. I use 325, my oven gets screaming hot.
Cook for 45 minutes, or until toothpick is clean. Don't over bake!
