Cut the corn from the cob, make sure to get the cob off all the ears.
Cut up all your veggies.
cut up your jalapenos-fresh
cut up one yellow onion
use a big cast-iron skillet, this gets the best flavor for this type of pan.
put olive oil in pan and let it start to sixxle not burn.
throw in the corn, and onions and jalapenos. Saute them in the olive oil.
Once it has been sauteing for about 15 minutes, add in the cream cheese.
then add in the 1 cup of heavy cream.
Please do not add any liquid to the mixture.
Keep stirring until it has almost melted completely( the cream cheese)
Add the grilled chicken back into the pan, and put into a 350 degree oven
Place into oven for about 40 minutes.
Once done take out, and serve over rice.
